Maroulosalata Greek Lettuce Salad – Easy & Refreshing

Ingredients

  • 1 large head romaine lettuce (or green leaf lettuce), finely chopped
  • 4-5 scallions (green onions), thinly sliced
  • 1/2 cup fresh dill, finely chopped
  • 1/4 cup extra virgin olive oil (good quality)
  • 2 tablespoons red wine vinegar (or fresh lemon juice)
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon freshly ground black pepper, or to taste

Instructions

  1. Thoroughly wash and dry the lettuce. It’s crucial for the lettuce to be very dry so the dressing adheres well and doesn’t become watery. You can use a salad spinner or pat it dry with kitchen towels.
  2. Finely chop the dried lettuce. The traditional cut for Maroulosalata is quite fine, almost shredded. Place the chopped lettuce into a large salad bowl.
  3. Add the thinly sliced scallions and the finely chopped fresh dill to the bowl with the lettuce.
  4. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar (or lemon juice), sea salt, and black pepper until well combined and slightly emulsified.
  5. Pour the dressing over the lettuce mixture. Using salad tongs, gently toss the salad until all the ingredients are evenly coated with the dressing.
  6. Taste and adjust seasoning if necessary, adding more salt, pepper, or vinegar to your preference.
