Maroulosalata Greek Lettuce Salad – Easy & Refreshing

Ingredients
- 1 large head romaine lettuce (or green leaf lettuce), finely chopped
- 4-5 scallions (green onions), thinly sliced
- 1/2 cup fresh dill, finely chopped

- 2 tablespoons red wine vinegar (or fresh lemon juice)
- 1/2 teaspoon sea salt, or to taste
- 1/4 teaspoon freshly ground black pepper, or to taste
Instructions
- Thoroughly wash and dry the lettuce. It’s crucial for the lettuce to be very dry so the dressing adheres well and doesn’t become watery. You can use a salad spinner or pat it dry with kitchen towels.
- Finely chop the dried lettuce. The traditional cut for Maroulosalata is quite fine, almost shredded. Place the chopped lettuce into a large salad bowl.
- Add the thinly sliced scallions and the finely chopped fresh dill to the bowl with the lettuce.
- In a small bowl, whisk together the extra virgin olive oil, red wine vinegar (or lemon juice), sea salt, and black pepper until well combined and slightly emulsified.
- Pour the dressing over the lettuce mixture. Using salad tongs, gently toss the salad until all the ingredients are evenly coated with the dressing.
