Ingredients
- 1 (8-ounce / 225g) block feta cheese, preferably firm, crumbled
- 12-15 sheets frozen phyllo dough, thawed according to package directions
- 1/2 cup unsalted butter, melted
- 1 tablespoon olive oil (optional, for crumbling feta)
- For the Chili Honey Magic:
- 1/2 cup honey
- 1-2 teaspoons red pepper flakes (or more, to taste), or 1 tablespoon sriracha
- For Garnish (optional):
- Fresh mint leaves, finely chopped
- Toasted sesame seeds
Instructions
- Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper.
- In a small bowl, gently crumble the feta cheese. If desired, drizzle with olive oil and a pinch of black pepper, mixing lightly.
- Carefully unroll the thawed phyllo dough and lay it flat on a clean, dry surface. Keep the unused sheets covered with a damp paper towel or plastic wrap to prevent them from drying out.
- Take one sheet of phyllo, lay it on your work surface, and brush it lightly but completely with melted butter. Top with a second phyllo sheet, brush with butter, and then a third sheet, brushing again. You’ll have a stack of three buttered phyllo sheets.
- Cut the stacked phyllo sheets lengthwise into three equal strips (about 3-4 inches wide each).
- Place about 1 tablespoon of the crumbled feta mixture at one end of each phyllo strip. Fold one corner of the phyllo over the filling to form a triangle, then continue folding the triangle flag-style until you reach the end of the strip, creating a neat feta ‘roll’. Ensure the feta is enclosed.
- Repeat the process with the remaining phyllo sheets and feta filling, continuing to make stacks of three and forming rolls until all the feta is used.
