  • 1 lb ground beef (80/20 preferred)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 (6 oz) can tomato paste
  • 1 cup beef broth
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • 1 cup elbow macaroni, uncooked
  • 1/2 cup shredded cheddar cheese (or mozzarella, or a blend)
  • 2 tbsp olive oil (or preferred cooking oil)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  2. Add chopped onion to the skillet with the beef and cook until softened, about 3-5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Stir in the tomato sauce, tomato paste, beef broth, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  4. Add the uncooked elbow macaroni to the skillet, stirring to combine everything well.
  5. Reduce heat to low, cover, and let simmer for 15-20 minutes, or until the macaroni is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
  6. Once the pasta is cooked, remove from heat and stir in the shredded cheese until melted and creamy.
