Ingredients
- 1 pound short pasta (e.g., penne, rigatoni, fusilli)
- 6 slices beef bacon, chopped
- 1 pound lean ground beef
- 1 tablespoon olive oil (if needed)
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 (6 ounce) can tomato paste
- 1/2 cup beef broth
- 1 (28 ounce) can crushed tomatoes
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon black pepper
- Salt to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining. Set aside.
- While pasta cooks, heat a large skillet or Dutch oven over medium heat. Add chopped beef bacon and cook until crispy. Remove bacon with a slotted spoon and set aside on a paper towel-lined plate, reserving the rendered fat in the skillet.
- If needed, add 1 tablespoon of olive oil to the skillet with the bacon fat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease and set the cooked ground beef aside with the bacon.
- Add the diced onion to the same skillet and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the tomato paste and cook for 2-3 minutes, stirring constantly, to deepen its flavor.
- Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
- Add the crushed tomatoes, heavy cream, Italian seasoning, and black pepper. Stir well to combine and bring the sauce to a gentle simmer. Season with salt to taste.
- Return the cooked ground beef to the sauce. Stir in the cooked pasta and 1/2 cup of grated Parmesan cheese. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
- Stir in most of the crispy beef bacon, reserving some for garnish. Cook for another 2-3 minutes, allowing the flavors to meld.
- Serve immediately, garnished with fresh chopped parsley, the remaining crispy beef bacon, and extra grated Parmesan cheese.
