  • 2 (15-ounce) cans large butter beans (or cannellini beans), rinsed and drained
  • 4 tablespoons unsalted butter, divided

  • 3 cloves garlic, minced
  • 1 cup vegetable broth (or chicken broth)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese (plus more for garnish)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 tablespoon fresh lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet or Dutch oven, melt 2 tablespoons of butter and the olive oil over medium heat.
  2. Add the finely diced onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.
  3. Stir in the minced garlic and fresh thyme, cooking for another minute until fragrant.
