Easy Miso Soup Recipe – Delicious & Quick

  • 4 cups (1 liter) water
  • 1 teaspoon dashi powder (hondashi)

  • 2 tablespoons dried wakame seaweed
  • 2 green onions, thinly sliced (for garnish, optional)

Instructions

  1. In a medium saucepan, combine the water and dashi powder. Bring the mixture to a gentle simmer over medium heat. Do not let it come to a rolling boil.
  2. While the dashi is heating, rehydrate the dried wakame. Place the wakame in a small bowl and cover with warm water for 5 minutes. It will expand significantly. Drain thoroughly and gently squeeze out any excess water.
  3. Reduce the heat to low. Add the cubed tofu and rehydrated wakame to the simmering dashi. Let it heat through for 1-2 minutes.
  4. In a small bowl, scoop out 3-4 tablespoons of miso paste. Ladle about 1/2 cup of the hot dashi broth into the bowl with the miso paste. Whisk until the miso paste is fully dissolved and smooth. This prevents clumps in the soup.
  5. Pour the dissolved miso mixture back into the saucepan with the dashi, tofu, and wakame. Stir gently to combine. It’s crucial not to boil the soup after adding the miso, as high heat can destroy the delicate flavors and beneficial probiotics in the miso.
  6. Heat the soup for just another minute, ensuring it’s warmed through but not boiling. Taste and adjust miso paste if desired (add more if you prefer a stronger flavor).
