Ingredients

  • 1 lb boneless, skinless chicken breasts

  • 2 tbsp rice vinegar
  • 2 tbsp lime juice (from 1-2 limes)
  • 1 tbsp maple syrup or honey
  • 1 tsp sesame oil
  • 1-inch piece fresh ginger, grated
  • 2 cloves garlic, minced
  • 1/2 tsp Sriracha or red pepper flakes (optional, for heat)
  • 2-4 tbsp warm water (to thin to desired consistency)
  • 1 head butter lettuce or large romaine lettuce leaves, separated and washed
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced cucumber
  • 1/2 cup thinly sliced red bell pepper
  • 1/4 cup shredded red cabbage (optional)
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp crushed roasted peanuts (optional, for garnish)
  • Lime wedges (optional, for garnish)

Instructions

  1. **Cook the Chicken:** Preheat oven to 400°F (200°C) or heat a large skillet over medium-high heat. Pat chicken breasts dry, rub with olive oil, salt, and pepper. Bake for 20-25 minutes until cooked through (internal temperature 165°F/74°C), or pan-fry for 6-8 minutes per side. Once cooked, let rest for 5 minutes, then shred or dice into bite-sized pieces.
  2. **Prepare the Peanut Sauce:** In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, lime juice, maple syrup, sesame oil, grated ginger, minced garlic, and Sriracha (if using). Add warm water 1 tablespoon at a time, whisking until the sauce reaches a smooth, pourable consistency. Taste and adjust seasonings as needed.
  3. **Assemble the Filling:** In a large bowl, combine the shredded chicken, shredded carrots, sliced cucumber, red bell pepper, and red cabbage (if using). Drizzle about half of the prepared peanut sauce over the mixture and toss gently to coat. Reserve the remaining sauce for serving.
  4. **Prepare Lettuce Wraps:** Arrange the washed lettuce leaves on a serving platter.
