Ingredients
- 2 tbsp olive oil
- 8 oz cremini (baby bella) mushrooms, sliced
- 2 medium zucchinis, cut into half-moons or 1/2-inch cubes
- 2 cloves garlic, minced
- 1/2 tsp dried Italian seasoning (optional)
- Salt to taste
- Freshly ground black pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet or non-stick pan over medium-high heat.
- Add the sliced mushrooms to the hot skillet in a single layer. Cook for 3-5 minutes, undisturbed, allowing them to brown nicely before stirring. Continue to cook, stirring occasionally, until the mushrooms are tender and have released most of their liquid.
- Add the zucchini to the skillet with the mushrooms. Sauté for another 5-7 minutes, stirring occasionally, until the zucchini is tender-crisp and slightly browned.
- Stir in the minced garlic and Italian seasoning (if using). Cook for 1 minute more until fragrant, being careful not to burn the garlic.
- Season generously with salt and freshly ground black pepper to taste. Remove from heat.
- Garnish with fresh chopped parsley and serve immediately as a quick and healthy side dish.
