  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon pure vanilla extract
  • Pinch of salt
  • Fresh mint leaves or extra mango cubes, for garnish (optional)

Instructions

  1. **Prepare the Coconut Cream:** Chill a can of full-fat coconut milk in the refrigerator overnight. Do not shake it. The next day, open the can and scoop out the thick, solid coconut cream from the top, leaving the liquid coconut water behind. You should get about 3/4 to 1 cup of cream.
  2. **Blend the Mango Puree:** In a high-speed blender, combine the chopped mangoes, agave nectar (or maple syrup), fresh lime juice, vanilla extract, and a pinch of salt. Blend until completely smooth and creamy. Taste and adjust sweetness if desired.
  3. **Whip the Coconut Cream:** In a separate medium bowl, using an electric hand mixer or a stand mixer with a whisk attachment, whip the solid coconut cream until light and fluffy, resembling whipped cream. Be careful not to overmix, or it can become grainy.
  4. **Combine and Fold:** Gently fold the mango puree into the whipped coconut cream until just combined. Be careful not to deflate the whipped cream too much. The mixture should be light and airy.
