- 2 cups grated zucchini (about 2 medium zucchini, excess water squeezed out slightly)
Instructions
- Preheat your oven to 325°F (160°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg (if using). Set aside.
- In a separate medium bowl, combine the granulated sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
- Pour the wet ingredients into the dry ingredients. Stir just until moistened. Do not overmix; a few lumps are fine.
- Gently fold in the grated zucchini until evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean. If the top browns too quickly, you can loosely tent it with foil.
- Remove the loaf from the oven and let it cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
