Ingredients
- 1 cup (about 1 medium) sweet potato, cooked and mashed (about 250g puree)
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup (75g) unsweetened cocoa powder (Dutch-processed recommended)
- 1/2 cup (60g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup (170g) chocolate chips, divided (optional, for extra gooeyness)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides to easily lift the brownies out later. Lightly grease the parchment paper.
- In a large bowl, combine the mashed sweet potato puree, melted butter, granulated sugar, and brown sugar. Whisk until smooth and well combined.
- Add the eggs one at a time, whisking well after each addition until fully incorporated. Stir in the vanilla extract.
- In a separate medium bowl, whisk together the cocoa powder, all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing with a spatula until just combined. Be careful not to overmix. Fold in 3/4 cup of the chocolate chips, if using.
- Pour the brownie batter into the prepared baking pan, spreading it evenly. Sprinkle the remaining 1/4 cup of chocolate chips over the top, if desired.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs, but not wet batter. The brownies will still look a little moist in the center, which is perfect for a fudgy texture.
- Remove the pan from the oven and let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang. This is crucial for fudginess and easy cutting.
- Once cooled, cut into squares and enjoy your incredibly gooey and fudgy sweet potato brownies!
