  • 2 tablespoons lemon zest (from 2-3 lemons)

  • ½ cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, using an electric mixer, cream together the softened butter and 1 ½ cups granulated sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the eggs one at a time, then stir in the fresh lemon juice, lemon zest, and vanilla extract until well combined.
