Ingredients

  • 4-5 ripe Roma tomatoes (about 2 cups), finely diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, finely chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic glaze (or 1 tablespoon balsamic vinegar if you prefer less sweetness, for mixing)
  • 1/2 cup shredded mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese, divided
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon freshly ground black pepper, or to taste
  • Optional: 1 tablespoon finely minced red onion
  • For serving: Sliced baguette, pita chips, or crackers

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium mixing bowl, combine the diced tomatoes, minced garlic, chopped fresh basil, extra virgin olive oil, balsamic glaze (or vinegar), salt, black pepper, and optional minced red onion.
  3. Stir in half of the shredded mozzarella cheese and half of the grated Parmesan cheese into the tomato mixture.
  4. Transfer the mixture to a small oven-safe baking dish (e.g., an 8×8 inch dish or a 1-quart capacity dish).
  5. Sprinkle the remaining shredded mozzarella and grated Parmesan cheese evenly over the top of the dip.
  6. Bake for 15-20 minutes, or until the dip is bubbly around the edges and the cheese on top is melted and lightly golden brown.
  7. Remove from the oven and let it cool for a few minutes before serving. Garnish with extra fresh basil or a drizzle of balsamic glaze if desired.
  8. Serve warm directly from the baking dish with sliced baguette, pita chips, or your favorite crackers.
  9. Enjoy your crowd-pleasing Bruschetta Dip!
