Ingredients
- 4-5 ripe Roma tomatoes (about 2 cups), finely diced
- 3 cloves garlic, minced
- 1/4 cup fresh basil, finely chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic glaze (or 1 tablespoon balsamic vinegar if you prefer less sweetness, for mixing)
- 1/2 cup shredded mozzarella cheese, divided
- 1/4 cup grated Parmesan cheese, divided

Instructions
- Preheat your oven to 375°F (190°C).
- In a medium mixing bowl, combine the diced tomatoes, minced garlic, chopped fresh basil, extra virgin olive oil, balsamic glaze (or vinegar), salt, black pepper, and optional minced red onion.
- Stir in half of the shredded mozzarella cheese and half of the grated Parmesan cheese into the tomato mixture.
