Easy Flourless Oatmeal Carrot Cake-Quick & Delicious

Ingredients

  • 1 ½ cups rolled oats (gluten-free if desired)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup unsweetened applesauce (or ¼ cup vegetable oil for a richer cake)
  • ½ cup packed light brown sugar (or maple syrup for a refined sugar-free option)
  • 1 tsp vanilla extract
  • 1 ½ cups finely shredded carrots (about 2-3 medium carrots)
  • ½ cup chopped walnuts or pecans (optional)
  • ¼ cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease and flour an 8×8 inch square baking pan or a 9-inch round cake pan.
  2. In a food processor or high-speed blender, process the rolled oats until they reach a fine, flour-like consistency. This is your oat flour.
  3. In a large mixing bowl, whisk together the oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Make sure there are no lumps.
  4. In a separate medium bowl, whisk together the eggs, unsweetened applesauce (or oil), brown sugar (or maple syrup), and vanilla extract until well combined and smooth.
  5. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula or whisk until just combined. Be careful not to overmix the batter.
  6. Gently fold in the finely shredded carrots. If using, also fold in the chopped walnuts/pecans and raisins until evenly distributed.
  7. Pour the cake batter into your prepared baking pan and spread it evenly with a spatula.
  8. Bake for 25-30 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for about 10 minutes before carefully transferring it to a wire rack to cool completely. Serve plain or with your favorite cream cheese frosting or glaze.
