Ingredients
- 1 lb thinly sliced beef (sirloin, flank steak, or minute steak)
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp fish sauce
- 1 tsp brown sugar
- 2 cloves garlic, minced
- 1 tbsp neutral cooking oil (like canola or vegetable oil)
- 1 cup fresh Thai basil leaves
- 8-10 large round rice paper wrappers
- For Dipping Sauce (optional, or use store-bought sweet chili sauce):
- 2 tbsp fish sauce
- 1 tbsp fresh lime juice
- 1 tbsp water
- 1 tsp granulated sugar
- 1 small bird’s eye chili, thinly sliced (optional)
Instructions
- In a medium bowl, combine the thinly sliced beef with soy sauce, oyster sauce, fish sauce, brown sugar, and minced garlic. Toss to coat evenly and let marinate for 10-15 minutes at room temperature.
- Heat the neutral cooking oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry quickly until just cooked through and lightly browned, about 2-3 minutes. Do not overcrowd the pan; cook in batches if necessary. Remove beef from the pan and set aside.
- Prepare your rice paper wrappers: Fill a shallow dish or pie plate with warm water. Dip one rice paper wrapper into the water for 15-20 seconds, or until it becomes soft and pliable. Do not oversoak.
- Carefully lay the softened wrapper flat on a clean, damp cutting board or work surface. Place a small amount of the cooked beef (approximately 2 tablespoons) and several fresh Thai basil leaves near the bottom edge of the wrapper, leaving space on the sides.
- Fold the bottom edge of the wrapper over the filling. Then, fold in the left and right sides of the wrapper. Tightly roll the wrapper from the bottom upwards into a compact, secure roll.
- Repeat the process with the remaining rice paper wrappers, cooked beef, and Thai basil leaves until all ingredients are used.
- If making the homemade dipping sauce, whisk together fish sauce, fresh lime juice, water, granulated sugar, and thinly sliced bird’s eye chili (if using) in a small bowl until the sugar dissolves.
