Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 1 tbsp olive oil or coconut oil
- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp curry powder
- 1/2 tsp turmeric powder
- 1/4 tsp red pepper flakes (optional, for a hint of heat)
- 1 (13.5 oz) can full-fat coconut milk
- 1/2 cup chicken broth
- Juice of 1 lime (about 2 tbsp)
- Zest of 1 lime
- 1/4 cup fresh cilantro, chopped (for garnish)
- Salt and freshly ground black pepper to taste
Instructions
- Season the chicken pieces generously with salt and pepper.
- Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until lightly browned on all sides, about 3-5 minutes. Remove the chicken from the skillet and set aside.
- Reduce heat to medium. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
- Stir in the minced garlic, grated ginger, curry powder, turmeric, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- Pour in the coconut milk and chicken broth, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a gentle simmer.
- Return the browned chicken to the skillet. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the chicken is cooked through and tender.
- Remove from heat. Stir in the lime juice and lime zest.
- Taste and adjust seasoning with salt and pepper as needed.
