  • 1 cup brown or green lentils, rinsed
  • 1 cup long-grain white rice, rinsed
  • 4 cups vegetable broth (or chicken broth)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (for serving)
  • Lemon wedges (for serving)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.
  3. Stir in the minced garlic and ground cumin, cooking for another minute until fragrant.
  4. Add the rinsed lentils and rinsed rice to the pot, stirring to combine them with the aromatic base.
  5. Pour in the vegetable broth, salt, and black pepper. Bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot tightly, and simmer for 20-25 minutes, or until the lentils and rice are tender and most of the liquid has been absorbed.
  7. Remove the pot from the heat and let it stand, covered, for 5 minutes to allow the remaining steam to finish cooking.
