Ingredients

  • 1 baguette or ciabatta loaf, sliced into 1/2-inch thick pieces
  • 4-5 ripe Roma tomatoes, diced
  • 2 cloves garlic, peeled (1 minced for topping, 1 whole for rubbing bread)
  • 1/4 cup fresh basil leaves, finely chopped, plus extra for garnish
  • 3 tablespoons extra virgin olive oil, divided
  • 1 tablespoon balsamic glaze (optional)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Arrange the sliced bread in a single layer on a baking sheet.
  2. Lightly brush or drizzle 1 tablespoon of olive oil over one side of each bread slice.
  3. Bake for 7-10 minutes, or until the bread is golden brown and lightly crispy. Remove from the oven.
  4. While the bread is toasting, in a medium bowl, combine the diced tomatoes, minced garlic, chopped fresh basil, 2 tablespoons of extra virgin olive oil, salt, and freshly ground black pepper. Stir gently to combine.
  5. Once the toasted bread is slightly cooled, take the remaining whole clove of garlic and rub it generously over the toasted side of each bread slice. This imparts a wonderful subtle garlic flavor.
  6. Spoon a generous amount of the tomato mixture onto each slice of garlic-rubbed toast.
  7. Arrange the bruschetta on a serving platter. Drizzle with balsamic glaze, if using, and garnish with extra fresh basil leaves.
  8. Serve immediately and enjoy this amazing Classic Bruschetta Recipe!
