  • 2 ripe mangoes, peeled and diced
  • ¼ cup red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1-2 tablespoons fresh lime juice (from 1 lime)
  • ½ jalapeño, seeded and minced (optional, for a kick)
  • Pinch of salt (for salsa)
  • 4 (6 oz / 170g) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • ½ teaspoon salt (for salmon)
  • ¼ teaspoon black pepper
  • Pinch of garlic powder (optional)

Instructions

  1. **Prepare the Coconut Rice:** Rinse the rice thoroughly under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, coconut milk, water, and salt (and sugar, if using). Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15-18 minutes, or until all liquid is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
