Lemon Blueberry Truffles – Easy & Delicious Recipe

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar, sifted
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 1/4 cup freeze-dried blueberries, crushed
  • 1 cup white chocolate chips
  • 1 teaspoon coconut oil (optional, for melting chocolate)
  • Extra lemon zest and crushed freeze-dried blueberries for garnish (optional)

Instructions

  1. In a medium bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
  2. Add the sifted powdered sugar, lemon zest, and vanilla extract to the cream cheese. Beat until well combined and fluffy.
  3. Gently fold in the crushed freeze-dried blueberries until evenly distributed throughout the mixture.
  4. Cover the bowl and refrigerate the mixture for at least 1-2 hours, or until firm enough to roll.
  5. Once chilled, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into smooth balls. Place them on a parchment-lined baking sheet.
  6. Return the rolled truffles to the refrigerator while you prepare the white chocolate coating.
  7. In a microwave-safe bowl, combine the white chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring well after each, until the chocolate is completely melted and smooth.
  8. Dip each chilled truffle into the melted white chocolate, ensuring it’s fully coated. Use a fork or a dipping tool to gently tap off excess chocolate.
  9. Carefully place the coated truffles back onto the parchment-lined baking sheet.
