Ingredients

  • 1 pound short pasta (e.g., penne, rigatoni, fusilli)
  • 6 slices beef bacon, chopped
  • 1 pound lean ground beef
  • 1 tablespoon olive oil (if needed)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 (6 ounce) can tomato paste
  • 1/2 cup beef broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining. Set aside.
  2. While pasta cooks, heat a large skillet or Dutch oven over medium heat. Add chopped beef bacon and cook until crispy. Remove bacon with a slotted spoon and set aside on a paper towel-lined plate, reserving the rendered fat in the skillet.
  3. If needed, add 1 tablespoon of olive oil to the skillet with the bacon fat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease and set the cooked ground beef aside with the bacon.
  4. Add the diced onion to the same skillet and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  5. Stir in the tomato paste and cook for 2-3 minutes, stirring constantly, to deepen its flavor.
  6. Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
  7. Add the crushed tomatoes, heavy cream, Italian seasoning, and black pepper. Stir well to combine and bring the sauce to a gentle simmer. Season with salt to taste.
  8. Return the cooked ground beef to the sauce. Stir in the cooked pasta and 1/2 cup of grated Parmesan cheese. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
  9. Stir in most of the crispy beef bacon, reserving some for garnish. Cook for another 2-3 minutes, allowing the flavors to meld.
  10. Serve immediately, garnished with fresh chopped parsley, the remaining crispy beef bacon, and extra grated Parmesan cheese.
