Red White Blue Cheesecake Strawberries Recipe

Ingredients
- 24 large fresh strawberries
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/4 tsp lemon zest (optional, for brightness)
- 1 cup fresh blueberries
Instructions
- Wash strawberries thoroughly and pat dry. Carefully hull the strawberries, then use a small spoon or melon baller to gently hollow out the center of each strawberry, creating a cavity for the filling. Be careful not to go all the way through the bottom.
- In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add the powdered sugar, vanilla extract, and lemon zest (if using) to the cream cheese. Beat until well combined and fluffy, scraping down the sides of the bowl as needed.
- Transfer the cheesecake filling to a piping bag fitted with a star tip (or a Ziploc bag with a corner snipped off).
- Pipe the cheesecake filling into the hollowed-out strawberries, filling each one generously.
- Arrange the filled strawberries on a serving platter. Garnish each strawberry with a few fresh blueberries on top of the cheesecake filling.
