Spicy Drunken Noodles Recipe- Easy & Delicious Thai Dish

Ingredients

  • 1 lb fresh wide rice noodles (or dried, rehydrated according to package)
  • 1 tbsp vegetable oil
  • 1 lb chicken breast or shrimp, sliced or peeled and deveined
  • 4-5 cloves garlic, minced
  • 2-3 Thai bird’s eye chilies, thinly sliced (or 1-2 jalapeños for milder heat)
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup baby corn, halved
  • 1/2 cup holy basil or regular basil leaves
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp light soy sauce (or regular soy sauce)
  • 1 tsp sugar
  • 1/2 tsp white pepper
  • 2 tbsp water

Instructions

  1. Prepare the noodles: If using fresh noodles, gently separate them. If using dried, soak in hot water for 15-20 minutes until pliable but still firm, then drain well.
  2. Make the sauce: In a small bowl, whisk together the oyster sauce, fish sauce, dark soy sauce, light soy sauce, sugar, white pepper, and water. Set aside.
  3. Heat the oil: Heat a large wok or skillet over high heat until smoking. Add the vegetable oil, swirling to coat the pan.
  4. Cook aromatics and protein: Add the minced garlic and sliced chilies to the hot oil and stir-fry for 15-20 seconds until fragrant (be careful not to burn the garlic). Add the chicken or shrimp and stir-fry until cooked through, about 3-5 minutes.
  5. Add vegetables: Toss in the sliced onion, red bell pepper, broccoli florets, and baby corn. Stir-fry for 2-3 minutes until vegetables are tender-crisp.
  6. Combine with noodles and sauce: Add the prepared rice noodles to the wok. Pour the sauce mixture over the noodles and vegetables.
  7. Stir-fry thoroughly: Using spatulas or tongs, quickly and vigorously stir-fry to coat all the noodles and ingredients evenly with the sauce. Continue to stir-fry for 2-3 minutes until the noodles are well combined and slightly charred in places.
  8. Finish with basil: Remove the wok from the heat and immediately stir in the holy basil or regular basil leaves. The residual heat will wilt the basil perfectly.
  9. Serve hot: Transfer the Spicy Drunken Noodles to serving plates and enjoy immediately.
