Creamy Coconut Lime Chicken – Easy Flavorful Recipe

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 tbsp olive oil or coconut oil
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp curry powder
  • 1/2 tsp turmeric powder
  • 1/4 tsp red pepper flakes (optional, for a hint of heat)
  • 1 (13.5 oz) can full-fat coconut milk
  • 1/2 cup chicken broth
  • Juice of 1 lime (about 2 tbsp)
  • Zest of 1 lime
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Season the chicken pieces generously with salt and pepper.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until lightly browned on all sides, about 3-5 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce heat to medium. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
  4. Stir in the minced garlic, grated ginger, curry powder, turmeric, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  5. Pour in the coconut milk and chicken broth, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a gentle simmer.
  6. Return the browned chicken to the skillet. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the chicken is cooked through and tender.
  7. Remove from heat. Stir in the lime juice and lime zest.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Garnish with fresh chopped cilantro and serve hot over rice, quinoa, or with naan bread.
