Easy Skillet Zucchini and Mushrooms Recipe- Quick Side Dish

Ingredients

  • 2 tbsp olive oil
  • 8 oz cremini (baby bella) mushrooms, sliced
  • 2 medium zucchinis, cut into half-moons or 1/2-inch cubes
  • 2 cloves garlic, minced
  • 1/2 tsp dried Italian seasoning (optional)
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet or non-stick pan over medium-high heat.
  2. Add the sliced mushrooms to the hot skillet in a single layer. Cook for 3-5 minutes, undisturbed, allowing them to brown nicely before stirring. Continue to cook, stirring occasionally, until the mushrooms are tender and have released most of their liquid.
  3. Add the zucchini to the skillet with the mushrooms. Sauté for another 5-7 minutes, stirring occasionally, until the zucchini is tender-crisp and slightly browned.
  4. Stir in the minced garlic and Italian seasoning (if using). Cook for 1 minute more until fragrant, being careful not to burn the garlic.
  5. Season generously with salt and freshly ground black pepper to taste. Remove from heat.
  6. Garnish with fresh chopped parsley and serve immediately as a quick and healthy side dish.
