Ingredients

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (170g) chocolate chips (semi-sweet or dark)
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined and smooth.
  3. Whisk in the eggs one at a time, until fully incorporated. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the cocoa powder, all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Fold in the chocolate chips until evenly distributed throughout the dough.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Bake for 10-12 minutes, or until the edges are set but the centers still look slightly soft. The tops will have a crackled appearance.
  9. Immediately after removing from the oven, sprinkle each cookie lightly with flaky sea salt.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. This helps them set and retain their fudgy texture.
